This salad is one of my favorite salads. Delicious with the sweetness of bacon and pecans.
The ingredients
Mix the dressing together and let chill for at least one hour. It will separate so you will have to shake it before you pour over the salad.
I blanched the broccoli but if you prefer raw broccoli, I have made it both ways.
Saute pecans in a dry pan.
Saute the bacon, once brown, remove from the pan. Add a broken up package of Ramen noodles without the flavor package. Let it brown slightly. Let cool completely
Now time to put together. Wash and chop a Romain and green onions. Add the broccoli.
Top with the pecans, bacon and ramen noodles.
I added a Hormel Pork Tenderloin, Teriyaki flavored that I had cooked, cooled and sliced on the diagonal.
An absolutely delicious salad meal.
Crunchy Salad
1 head washed Romaine lettuce
4 green onions – chopped
2 stalks of broccoli, tops only
1 c. pecans
4 to 6 slices of bacon
1 package Ramen Noodles without seasoning packet
1/4 stick butter or margarine
Dressing
½ c. oil
½ c. sugar
¼ c. red wine vinegar
1/8 c. soy sauce
Directions
Mix together dressing ingredients together and chill for one hour.
Wash and chop Romaine and green onions. Blanche the broccoli tops in boiling water for 1 to 2 minutes. Then plunge into ice water. Drain on paper towels. In a pan, add pecans and toast on low until toasted, approximately 5 minutes. Remove and set aside.
Cook the bacon in frying pan. Pull out of the pan and drain on paper towels. Add the ramen noodles and butter to pan and cook for several minutes until lightly browned. Let cool
Combine the lettuce, green onions, broccoli, pecans, and Ramen noodles. Chop bacon into bite size pieces.
Shake or mix the dressing again and pour over salad. Enjoy
