To celebrate the end of summer, the family had a lobster
boil. In my humble opinion, the lobster or crab boil is the perfect summer
dish. Sumer heat does not affect your dinner. No chilling, no worries about
keeping dishes warm, etc.
The hardest thing about this dish is the timing of when
you put the items into the boil.
Start with 8 quarts of water, add beer, hot sauce, a head
of garlic, lemons, bay leaves, onions, Old Bay seasoning and salt. Bring to a
boil.
Next add 2 lbs of Keilbasa and 2 lbs. of Andouille
sausage for 3 minutes
Add 3 lbs of new or red potatoes for 8 minutes
Add 6 ears of corn, halved for 4 minutes
Add 6 lobsters for 5 minutes
Add 3 lbs of shrimp and crab for 3 to 4 minutes.
Remove from water and allow to drain for a minute or two.
Pour onto a newspaper lined table or tray for a feast. Easy to make and so
