My little
grandson loves blueberries and I am always looking for a new recipes for him.
It is one of his favorite foods. So these drop biscuits fit the bill. Not only
are they delicious and flavorful but so easy.
In a bowl,
combine flour, sugar, baking soda, baking powder and salt baking powder. Whisk
to combine.
Then add an 8
oz. container of lemon yogurt, an egg and melted butter. Mix until just
combined, the batter will be stiff. Fold in 1 cup of blueberries. I used fresh
but you could use frozen.
Bake at 400
degrees for 15 to 18 minutes. I made a glaze of lemon juice, lemon peel and ½
c. confectioner sugar. Drizzle over the biscuits.
So good and a
fairly quick breakfast for the family.
Lemon Blueberry
Drop Biscuits
2 c. flour
½ c. sugar
2 t. baking powder
½ t. baking soda
¼ t. salt
8 oz. lemon yogurt
1 egg
¼ cup butter, melted
1 t. lemon peel
1 c. blueberries
Extra sugar for top of biscuits
Glaze.
½ c. confectioners’ sugar
2 T. lemon juice
½ t. lemon peel
