Okay,
I needed to find something spring like for the family to eat… a pie, a bowl of
fruit, some strawberries…. Anything. But then I found this recipe…… Blueberry
Whoopie Pies? Right up my alley.
Start
beating
softened butter, sugar and vanilla in a
bowl until creamy
In a separate
bowl, whisk flour, baking powder, salt and baking soda together.
Alternatively add
flour and milk into the egg mixture, carefully mixing by hand. Begin and end
with the flour mixture.
Add the
blueberries and fold into the mix carefully.
On a greased
parchment lined baking sheet, spoon the blueberry mixture onto the cookie
sheet. Tamp down the cookie a little with a wet finger.
Sprinkle with
sugar.
Bake at 375 degrees,
10 to 12 minutes.
Notice, the recipe makes six whoopie pies but 1 is missing... not mentioning any names.
Once baked and
cooled, mix cream cheese, butter, lemon juice, lemon zest and confectionery
sugar into a bowl. Place in a ziploc bag. I cut off the corner and added the
lemon cream to the middle of the two cookies.
Serve immediately
or carefully wrap individually in plastic wrap until needed. They are so
delicious.... you cannot imagine how good they are!!!
Blueberry Lemon Whoopie Pies (Adapted
from the Food Network)
Ingredients
For the cookies:
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
5 tablespoons unsalted butter, softened
2/3 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/3 cup milk
1 ½ cups of blueberries
For the filling:
4 ounces cream cheese, at room temperature
3 tablespoons unsalted butter, softened
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
Pinch of salt
1 1/2 cups confectioners' sugar
