I have never made
homemade pasta but wanted to try my hand at if for Valentine’s Day. The family
is celebrating on Friday when everyone is home. As a side dish, I hope this dish
fills their hearts and tummies with love.
Start with homemade
pasta, rolled out to the desired thickness.
Cut with a heart
shaped cookie cutter.
I made four
cheese filling for the ravioli.
Lay out the heart
pasta.
Spoon the filling
into the bottom of the ravioli.
Run water around
the edge and top with another heart.
Gently place into
salted, boiling water for 5 minutes. Drain onto a paper towel.
Top with warm
marinara sauce or alfredo sauce and parmesan cheese. Absolutely delicious.
Home Made Pasta
4 large eggs
1 T. water
1 T. olive oil
3 ½ c. sifted all
purpose flour
½ t. salt
Mix all
ingredients in mixer with paddle. If the ingredients are not pulling together,
add one tablespoon of water at a time until it does pull together.
Knead on a board
about three to four times until smooth. Cover with a slightly damp cloth for 20
minutes to rest the pasta. Roll on a floured board so the pasta would go
through the pasta roller.
I ran the pasta
through the pasta roller about 8 times, each time folding it again in thirds
and rolling with a pin in the opposite direction. The last time, I ran the
pasta through the machine, making the rollers smaller until the desired
thickness.
Four Cheese
Ravioli Filling
½ c. Ricotta
Cheese
½ c. Mozzarella
Cheese
½ c. Fontina
Cheese
½ c. Parmesan
Cheese
¼ t. Oregano
¼ t. Basil
¼ t. Parsley
¼ t. Kosher Salt
Mix thoroughly
and chill until ready to use.
*sigh* Sounds delish and looks delish. Makes me all warm and fuzzy inside! ;)
