I am always trying to get my
family to eat healthier and eat oatmeal. They won't touch it. So when I found
these muffins, I thought what a great way to get them to eat some oatmeal in
the muffins.
Start by taking 1/2 c of oats
and soak in 1/2 c. of orange juice. Let the oats soak while you combine the rest of
ingredients.
Combine flour, sugar, baking powder, baking soda, salt
together. Add vegetable oil and egg.
At this point, add the orange juice and oatmeal. Carefully
combine until the dry ingredients are just mixed. Muffins require very gently
mixing.
Lastly fold in one cup of fresh blueberries.
Spoon into a greased muffin pan. I sprinkled sugar and
cinnamon onto the top of the muffin batter. This recipe makes 12 muffins.
Bake at 400 degrees for 18 to 20 minutes.
Absolutely delicious.
The orange juice adds a touch of
brightness to the muffins and makes the blueberries taste so good.
Blueberry Muffins
1/2 c. orange juice
1/2 c. rolled oates
1 1/2 c. flour
1/2 c white sugar
1 1/4 t baking powder
1/4 t. baking soda
1/2 t. salt
1/2 c vegetable oil
1 egg, slightly beaten
1 c. blueberries
2 t. sugar
1/4 t. cinnamon
