Summer vegetables
are just around the corner and I don’t know about you but I love zucchini. But
when it comes in… it really comes in. So I thought I would try a gratin to see
if it would be a delicious dinner for the family.
Start with two
large onions. Peel, slice and sauté in 6 T. of butter for 20 minutes, until
onions are soft.
Add four
zucchini, sliced about ¼ inch thick. Sauté for another 10 minutes, covered. Add
salt, pepper and nutmeg and cook for another 5 minutes.
The nutmeg is important for the sauce… do not skip this important ingredient… you will love the addition.

Stir in flour.
Add hot milk and
cook over low heat until it creates a thick sauce.
Pour into a
greased baking dish, approximately 8 by 10 inches.
Cover with bread
crumbs and gruyere. Dot with butter and bake for 20 minutes in a preheated 350
degree oven for 20 minutes.
