My Mother's Day Dinner: Prime Rib

If Dad is making Mother’s Day dinner, I want anything grilled or prime rib. I have found the most fabulous recipe for prime rib. Absolutely delicious and absolutely foolproof.

Preheat oven to 375 degrees.

Start with an approximately 5 pound standing rib roast.

Sprinkle pepper, garlic powder and kosher salt on the exterior of the roast to form a crust.

Place on a roasting rack, fatty side up.

Roast in oven for one hour.
Are you ready…. Then turn off the oven. Yes, turn it off.

Leave in the oven for three hours without opening the door.

After three hours, turn the oven back to 375 degrees and roast for 30 to 40 minutes. Remember do not open the door at any point.

The roast will be absolutely perfect.

We trimmed the prime rib off the ribs and sliced, after resting for 10 minutes in aluminum foil. It was perfection and absolutely delicious without any effort. 

Add a twice baked potato and roasted asparagus... and you have the perfect meal.
