Lime Macademia Tart

Winter months always remind me of citrus. i guess citrus during these dreary months have the best flavor or is it because oranges and lemons remind me of the hot days in Florida or California? I thought I would make a lime tart that is packed with flavor. As you know, I am always working to pack lots of flavor during the winter months to make up for the lack of tasty fresh foods.

This tart is an easy to make dish that can be prepared ahead of time.

For the crust, combine 1 1/2 c. graham cracker crumbs, 1/2 c. macadamia nuts, finely chopped in a food processor, 1/4 c. sugar and 8 T. of butter melted. Place in a 10 inch tart pan and press the sides and bottom of the tart crust. Bake at 350 degrees for 7 to 9 minutes. Cool thoroughly.

For the filling, whisk 6 large eggs,  1 1/2 T of lime zest, 1/2 c. of lime juice (approximately 6 limes) in a glass bowl over low heat, like a double boiler. I use a saucepan with 2 inches of water in the bottom and let it boil, setting the glass bowl on top. Add 1 c. sugar and 6 T. melted butter. Cook, stirring continuously for 8 minutes or until thick and bubbly. Let cool for 15 to 20 minutes.

Pour filling into crust, cover and chill at least four hours or overnight.

Remove sides of the tart pan and garnish with whipped cream and limes.

P.S. Eat your tart right away or it looks like the tart above. A little runny whipped cream but still good!!
