Cooking: Bacon-Wrapped Scallops

I love to entertain and am always looking for an easy and elegant dish to wow my company. This dish is not only easy but is full of flavor… a big bonus. It can be made earlier in the day and put in the oven right before your company arrives.

Bacon Wrapped Scallops

  • 24 sea scallops
  • 24 pieces of bacon, cut in half
  • garlic powder
  • teriyaki sauce
  • cayenne pepper
  • olive oil

Wrap each scallop in half a strip of bacon and secure with a wooden toothpick. With a brush, lightly coat each scallop with olive oil spray and sprinkle with teriyaki sauce on both sides. Dust lightly with garlic powder and a pinch of cayenne pepper.

Place in baking dish and bake at 425°F, turning once for 20 to 30 minutes or until done. Remove toothpicks before serving.

Serves four.

Some people are intimidated by seafood but always look for fresh scallops that have no smell and are not slimy.
