I love asparagus, especially at Easter. However, during the summer I am always looking for a flavorable vegetable. This is an easy recipe that brings out the best of the asparagus.
Take 1 lb. of Asparagus. Cut the ends and trim the ends with a vegetable peeler.
Place on cookie sheet and top with olive oil, salt and pepper.
Roast for 25 minutes at 400 degrees.
An elegant, yummy and most especially easy side dish.
